It’s finally warming up in our neck of the woods and these spring days are bringing with them more chances to grill! If you’re not a meat eater or just need a break from the standard beef variety these @engine2diet burgers make an awesome alternative.
We love the simple clean ingredient list; these burgers are made with only black beans, brown rice, tomatoes, rolled oats, poblano pepper, pumpkin seeds, cilantro, sea salt, cumin, coriander and black pepper. Amazing! And with a list that simple we can happily serve them to our kiddos. Our toddlers prefer them chopped into small pieces so they can dunk in ketchup. Our school age kids prefer their own burger but here’s a tip; either pull out some of the bread from the inside of the bun or slice the bun into thirds instead of halves and save that middle slice for toast (or stash in the freezer for breadcrumbs). This makes the bun thinner and easier for small mouths to bite into! And a major victory; these burgers actually satiate our hungry teenagers too.
We topped these with avocado and our amazing veggie-packed ketchup. They would also be great with guacamole, shredded lettuce, fresh tomatoes and some jalapeño slices for kick.
A small confession: we got really lazy with lunches this week and toasted these burgers up in the toaster (who wants to dirty another pan?!?) and then crumbed them on top of salads. Delicious, super quick and added a nice hit of plant based protein.
