Happy New Year, Mamas! As I am writing this, I’m realizing I should have written a post about all of the healthy food I am eating as my new year’s resolution…but alas…I’m more worried about what to prepare for the crowd we are having over on Sunday afternoon to watch the Chicago Bears in the NFL Playoffs! I already know that today’s recipe is going to be a crowd favorite: Puff Pastry Pizza or, “Triple P”, as I have been calling it.
It is simple, beautiful, quick to bake, and even quicker to eat. Only a few ingredients, a few minutes in the oven, and you will have your football fans fed and ready to cheer on their boys (hopefully those boys are the Bears).
First, preheat your oven to 450 degrees F. Then, on a baking sheet lined with parchment paper, unfold your puff pastry (make sure it is thawed!). In the middle third, sprinkle mozzarella cheese, leaving room on the top and bottom edges. Over the cheese, layer pepperoni slices.
Alright this is a little tricky to explain, so I added the photo to hopefully show how to cut the pastry. But for everyone who isn’t a visual learner: cut a triangle into each corner of the pastry, discarding that part. Then, slice several diagonal strips (however thin you want) on each side.
Okay now that I have confused you with that, I am really going to confuse you with this: how to fold the pieces. Fold the top part down first, then carefully braid the strips into each other until you reach the bottom three pieces. Make sure to fold the bottom strip up, then braid the final pieces over to secure it. Hopefully this photo will help a bit more:

Pop the puff pastry pizza into the oven for 15-17 minutes, or until the pastry is flaky and golden, then let cool a bit. Cut into strips, and don’t forget your Mama Jess Garden Organic Pasta Sauce to dip the pizza in! What’s a pizza without sauce, after all?
