At my house we are officially in the full swing back to school mindset, which means I am loving anything that is minimal mess and maximum taste for dinner. That’s where these One Pan Shrimp Fajitas come in! In less than 30 minutes you have a full meal with a perfect balance of vitamin C filled veggies, protein filled shrimp, and if you don’t want the carbs from the fajita tortillas, try it wrapped in lettuce!

One Pan Shrimp Fajitas

- 1.5 pounds of shrimp, peeled and deveined.
- 1 each yellow, red, and orange peppers sliced
- 1 small onion, sliced (I used red, but I would redo with a yellow onion)
- 2 tbsp olive oil
- 2 tbsp each of: chili powder, onion powder, garlic powder, cumin, and paprika
- 2 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro to garnish
- Warm tortillas OR lettuce wraps
- Preheat oven to 450 degrees F
- In a large bowl, combine all of the ingredients and spices except the tortillas and cilantro, mix well.
- On a large baking sheet, spread everything into an even layer
- Bake for 8-10 minutes, remove from oven, stir and back for another 2-4 minutes, or until they have reached the blackened level that you prefer.
- Enjoy wrapped in warm tortillas or lettuce wraps!
