One Pan Shrimp Fajitas

At my house we are officially in the full swing back to school mindset, which means I am loving anything that is minimal mess and maximum taste for dinner. That’s where these One Pan Shrimp Fajitas come in! In less than 30 minutes you have a full meal with a perfect balance of vitamin C filled veggies, protein filled shrimp, and if you don’t want the carbs from the fajita tortillas, try it wrapped in lettuce!

Ingredients
  1. 1.5 pounds of shrimp, peeled and deveined.
  2. 1 each yellow, red, and orange peppers sliced
  3. 1 small onion, sliced (I used red, but I would redo with a yellow onion)
  4. 2 tbsp olive oil
  5. 2 tbsp each of: chili powder, onion powder, garlic powder, cumin, and paprika
  6. 2 tbsp lime juice
  7. Salt and pepper to taste
  8. Fresh cilantro to garnish
  9. Warm tortillas OR lettuce wraps
Instructions
  1. Preheat oven to 450 degrees F
  2. In a large bowl, combine all of the ingredients and spices except the tortillas and cilantro, mix well.
  3. On a large baking sheet, spread everything into an even layer
  4. Bake for 8-10 minutes, remove from oven, stir and back for another 2-4 minutes, or until they have reached the blackened level that you prefer.
  5. Enjoy wrapped in warm tortillas or lettuce wraps!
