Happy & Healthy Holidays from the Mama Jess Family to Yours!

We hope your holidays are festive, fun & balanced. Balanced? Hard to be balanced when we have a million things on our to-do lists but I always appreciate the reminder to focus on what matters during this holiday season. At the top of my list is cooking homemade comfort foods for my loved ones. I love to whip up a quick, healthy little appetizer for guests, parties or just a cozy Sunday afternoon movie. You’ll appreciate the quickness of this recipe and your guests will appreciate the homemade touch. And a side note – as my recipe tester, these have become my husband’s favorite football-watching snack too! Go Bears!

Enjoy the crunch these won ton wrappers bring to the creamy goodness of avocado & cream cheese. Topped with the spice of our organic enchilada sauce, bien good, you are going to LOVE these! If you are looking for a vegan option, try substituting the cream cheese with a plain hummus. The cheddar cheese topping is optional but it’s so light that you don’t have to feel guilty. We always vote for a baked appetizer instead of a store-bought, fried and additive-laden version.

  1. 24 won ton wrappers
  2. 1 avocado, diced
  3. 4 oz. cream cheese, light
  4. 1/2 cup mama jess bien good enchilada sauce
  5. 1/2 cup cheddar cheese, shredded
  1. preheat oven to 350 degrees,
  2. place 1 won ton wrapper gently into mini muffin pan cup that has been slightly oiled.
  3. scoop a teaspoon full of avocado into bottom of each won ton wrapper.
  4. scoop a 1 teaspoon of cream cheese on top of avocado.
  5. spoon 1 teaspoon of mama jess bien good sauce over the cream cheese.
  6. sprinkle a pinch of cheddar cheese over sauce.
  7. bake 10 minutes or until cheese is melted and wonton is golden.
  8. serve immediately!
