mama jess 10 minute sweet potato with avocado sauce and bien good enchilada sauce


Hello Friends –

We have been drooling over this post by the Blonde Vegan – Southwestern Baked Potato. We had try it ASAP with our Bien Good 7 Veggie Enchilada sauce added in the mix too.


Please check out her recipe here. We omitted the tomatoes and tempeh, only because they weren’t in our kitchen. Next try we’ll try it all. This is really a 10 minute lunch prep! And best part – the BIG flavor leaves you feeling full for hours. Sweet potatoes have been named the most perfect food by several groups because they are full of antioxidants, potassium & fiber.


10 minute sweet potato with avocado & bien sauces

  1. 2 sweet potatoes, organic
  2. 1 cup corn, organic ( frozen & thawed this time of year)
  3. 1/2 cup black beans
  4. 4 baby bell peppers, sliced
  5. 1/2 cup Mama Jess Bien Good Enchilada Sauce
Avocado Sauce
  1. 1 avocado
  2. juice of 1/2 lime
  3. 1 clove garlic
  4. 1/2 cup cilantro
  5. 1 teaspoon cumin
  6. 1/3 cup water
  7. pinch of salt & pepper
  1. cook sweet potatoes in microwave (approximately 6-8 minutes)
  2. add all avocado sauce ingredients to the blender and blend till smooth.
  3. cut sweet potatoes open length wise. top equally with corn, beans and peppers. spread avocado sauce and bien good over in rows.
  4. enjoy this quick and easy lunch!
