Lemon Buttermilk Scones

Surprise! We decided to grace you with not one…but TWO scone recipes! Consider it our early Mother’s Day gift for all of your lovely ladies. For all of the lemon lovers out there, this is such a delicious recipe that the 8 scones didn’t even make it to breakfast…they were entirely consumed by my family approximately 20 minutes after coming out of the oven. Let that be a warning…

Super easy to follow and absolutely delicious to enjoy, you will want Mother’s Day Brunch to be every day!

Lemon Buttermilk Scones

For the Scones
  1. 2 cups all purpose flour
  2. 1/2 cup sugar
  3. 1 tbsp baking powder
  4. 1/2 tbsp salt
  5. 1/2 cup buttermilk, very cold
  6. 1 stick butter, cubed and cold
  7. 1 large egg
  8. 1 1/2 tbsp lemon zest
For the Glaze
  1. 3 tbsp lemon juice
  2. 1/2 cup powdered sugar
For the Scones
  1. Preheat oven to 425
  2. In a large bowl, combine all dry ingredients well
  3. Using a pastry cutter, fork, or your fingers, combine cold butter into the dry ingredients until a coarse powder is formed
  4. In a separate bowl, whisk together buttermilk and egg
  5. Add in wet ingredients, stirring until a dough is formed
  6. Turn dough onto a clean surface, patting it into a disk about 1/2-1 inch thick
  7. Cut disk into 8 even pieces
  8. Bake on a parchment lined baking sheet for 14-16 minutes, or until the bottoms start to turn a light brown
  9. Let cool and drizzle glaze before serving
  10. Enjoy!
For the Glaze
  1. In a small bowl, whisk together lemon juice and powdered sugar until a desired thickness has been reached
  2. Drizzle lightly over scones prior to serving
