Crockpot Sweet Potato Chili

Winter is coming…and we are prepared! The goal: to bring you an easy crockpot recipe to keep you warm during these cold, cold evenings. This recipe is straight from Courtney at @ALifeFromScratch (follow her on Instagram for more amazing recipes!) and it is our new favorite way to enjoy healthy, comfort food at the dinner table.

We love this recipe because, while it is vegetarian, it doesn’t mean that you have to miss out on the traditional flavor and heartiness of chili. If you’re looking to add a bit more protein, I recommend browning some ground beef and adding it to the crockpot. We will definitely be enjoying this one again!

Crockpot Sweet Potato Chili

Ingredients
  1. 3 sweet potatoes, peeled and small chopped
  2. 2 cans black beans, rinsed and drained
  3. 1 jar of your favorite salsa (I used mild mango salsa)
  4. 2 tsp cumin
  5. 2 tsp paprika
  6. 1 tsp salt
  7. 2 cups vegetable stock
Instructions
  1. Add all of the ingredients in the crock pot.
  2. Cook on low for 6-7 hours OR cook on high for 3-4 hours. The sweet potatoes should be able to mash easily with a fork, that's how you know it's ready.
  3. Enjoy with your choice of toppings!
