I think March is sort of an awkward month, especially in Chicago. Yesterday, I woke up to birds chirping and the sun shining in my room at 7:00am. That made me so happy, that I’m sure you could imagine my extreme disappointment when I looked at the weather…and saw it was only 6 degrees outside.
So, I decided to cheer myself up with some Italian comfort food: a classic Meatball Sub. It managed to cheer me up so much that I decided to share it with you all today! Also, trust me on this, it tastes even better smothered in Mama Jess Garden Organic Pasta Sauce.
The homemade meatballs are my mom’s recipe and they are so juicy and delicious, that I’m surprised she didn’t want me to keep the recipe a secret. Here’s what you need to do:
First, pre-heat the oven to 400 degrees F. Sauté the finely diced onion until soft and put in a large mixing bowl. Into the same bowl, add the rest of the ingredients except for the mozzarella cheese, Mama Jess Sauce, and the rolls (obviously). Combine well, kneading the mixture together with your hands until everything is mixed in well together.

Using an ice cream scoop for sizing (or just eyeballing, like I did), roll the mixture into small, even sized balls and place them on to a parchment lined baking sheet. Bake for 14-16 minutes or until the fat has started to drip on to the baking sheet. This means they will be nice and juicy!
To assemble the sandwich, I recommend toasting your roll, open faced first. Then, place the meatballs inside the roll, smother in Mama Jess sauce (emphasis on “smother”), and cover that in shredded mozzarella cheese. I now highly recommend putting this sandwich back into the oven to bake until the cheese melts and browns a little bit. Then, let me tell you, do you have a sandwich!
Now I think we can all enjoy this until Spring finally arrives!
