Cauliflower Rice Jambalaya

Hello Mamas! Today I am bringing you the perfect “Oh Shoot I Still Need to Make Dinner” meal. It is packed with veggies and packed with a punch too! It’s an entree and side dish all in one so there is basically no fuss at all, and it takes less than 30 minutes to make. The other great thing? It features our sauce, of course!

Here is what I am talking about: Cauliflower Rice Jambalaya.

First things first: lets heat some olive oil up in a large sauté pan for a few seconds. Next, add in the garlic and onions, letting it all sauté until the onions are translucent. After a few minutes, add the diced peppers, stirring frequently until soft.

Next, in goes the sliced polish sausage. I used Kielbasa because it’s already pre-cooked, making for only a quick heat up necessary in the pan. Usually this means when the skin of the sausage starts to curl on the sides, it is perfect. Next, add your cauliflower rice, stirring it in with the rest of the mixture

To add some taste here is what you need to do: add in 5 tbsp Mama Jess Organic Garden Pasta Sauce, a pinch of salt, a dash of pepper, and however much cayenne pepper you would like (my family likes it HOT so we added red pepper flakes too).

When the sauce is simmering, your meal is done! That’s it! This is best enjoyed outside because…it’s finally warm out!

Ingredients
  1. 3 tbsp olive oil
  2. 3 tbsp minced garlic
  3. ¼ white onion, diced
  4. 1 bell pepper, diced
  5. 1 kielbasa sausage (long link), sliced
  6. 2 cups cauliflower rice
  7. 5 tbsp Mama Jess Organic Garden Pasta Sauce
  8. Salt, Pepper, and Cayenne Pepper to taste
Instructions
  1. In a large sauté pan, heat up olive oil
  2. Add in garlic and onions, heating until the onions are translucent
  3. Add in diced bell pepper, stirring occasionally until the peppers are soft
  4. Add in the sliced sausage, heating until the skin on the sausage starts to curl
  5. Add in cauliflower rice, Mama Jess Pasta Sauce, and spices
  6. Heat until the sauce starts to simmer
  7. Serve hot
  8. Enjoy!
