Happy almost weekend, Mamas! Today we are showing off a new recipe that really packs a punch: Pan Seared Chicken with Cauliflower “Risotto”. I have actually made this meal two nights in a row for dinner—and I mean made from scratch, not just reheated leftovers. That’s how good it is. The other plus: I made the entire meal in under an hour. I recently learned how to create the most perfect pan seared chicken breast, thanks to an Instagram account called @flavcity. This guy has great advice for simple cooking techniques, like pan searing chicken. The first thing you want to do is pound out the chicken breast to make it as flat and even as possible. This not only...

Hello, Mamas! I am popping on here to tell you about an awesome new recipe for every child’s favorite snack: chicken nuggets. Honestly, they are every adult’s favorite snack too. I think I am going to always have these ingredients handy because they are quick to make, easy for little hands to help with, and just plain delicious. The secret ingredient: potato chips! It doesn’t matter what flavor, I love barbecue, but I think the options are truly endless when it comes to being creative with this recipe. I do suggest, though, a sturdy chip. I prefer the Kettle Brand because their chips don’t grind to dust when I put them in the food processor with the...

30 Minute Shrimp Diavolo Pasta

Happy (almost) Valentine’s Day, mamas! My goal this week was to bring you all a recipe that is easy to make in a short amount of time, while still being romantic to share with your Valentine! One of my favorite, hands off, recipes is a One Pot Pasta that I copied from a Martha Stewart magazine years ago and have since tweaked for my taste. Today I am turning it into a Shrimp Diavolo dish and it will not disappoint! And when you have enjoyed the heat in this dish, cool down with something sweet like the cherry coconut macaroons we featured last week! Here’s how to make it: First, cook your shrimp (unless you bought pre-cooked!). All you have to do is lightly sauté...

One Pan Balsamic Pork Chops and Brussels

I am so proud of this recipe! I was going through things I had in my freezer (pork chops) and things I needed to get rid of in my fridge (an incredible amount of brussels sprouts that I bought on sale). Everything else I had in my fridge or pantry and it all just worked together! The subtle sweetness of the honey with the touch of spice from the Dijon was just the most delicious compliment to the pork chops. They were so juicy and tender too, thanks to the pan searing! Not to mention, the brussels sprouts were smothered in the sauce as well and were the perfect compliment. I also considered adding in diced butternut squash and even sweet potatoes! If you’re feeding a...

Zoodles Shrimp Scampi in 30 Minutes

Earlier this week, I had a conundrum. I had less than an hour to make and eat dinner, but I wanted something healthy and homemade. The problem, which you mamas can probably see, is: it can be difficult to make, eat, and enjoy a healthy meal in less than an hour. But today, I may deserve a medal, because I achieved it. That being bragged about, I should probably admit something. I cheated just a wee bit. I have always wanted to be that woman who grows her own herbs to spice up her handmade pasta with a side of hand kneaded and baked bread…but tonight, time was of the essence, of course. So here is the confession: I bought pre-spiralized zucchini noodles and frozen...
