Posted by on Dec 21, 2018 in blog, blogs, good meals, Uncategorized | Comments Off on “Take Two Helpings” Zucchini Lasagna

Alright Mamas, I’m not gonna lie…I was a little ambitious this week. I have a friend, Courtney, who I call the “Zucchini Queen”. But I pushed through, and two Band-Aids later, I was back at it. Second red flag: I burnt an entire tray of zucchini slices to a crisp. Still I did not order pizza. And you...

One of our favorite summer entertaining tricks is a Build Your Own ____ Bar. It can be build your own brat, burger, veggie burger, salmon sandwich, hot dog, chicken sandwich…you get the idea. Ask your guests to bring a side dish or fruit for dessert and your work is considerably less! This 4th of July we’re offering brats we got from our local pastured meat supplier (All Grass Farms for any of you locals!)  These toppings pair perfectly but honestly we’ve used this exact spread with beef burgers and salmon sandwiches too.  While it may seem like a lot condiments to ‘make’, keep in mind that they all are only a few ingredients, and...

Homemade Chicken Tenders

Posted by on Jun 18, 2018 in blog, blogs, good meals, recipes, Uncategorized | Comments Off on Homemade Chicken Tenders

These chicken tenders only took 84 tries before they were deemed ‘perfect’ by both me and the test group of kids. Arduous? Yes. Worth it? Most definitely.  I wanted a recipe that was as quick and easy to make as possible, but didn’t sacrifice on crunch and flavor. We tried a few methods; the standard three step dredge, a flour-egg-flour dredge, and even a ‘toss everything in a bag and shake it up’ method that some swear by. We also tried out various types of bread crumbs; panko, traditional and a delicious gluten free option made from crushed chickpeas.  The Dredge Method: The traditional flour-egg-breadcrumb dredging method...

Breakfast casseroles may be completely out of style but I’m going to keep loving them until the end of time. My mom started a holiday tradition of breakfast casseroles on Christmas, Easter or any other significant morning, so for me they feel a bit celebratory. She often used the overnight recipes that were so convenient; prep ingredients and assemble the night before and then throw it in the oven to bake first thing in the morning.  Lately we’ve been knee deep in all sorts of wonderful life craziness; end of the school year, house construction, summer travel and kids home all. dang. day. Which means amidst all the construction dust and coming...
