Wholesome Popcorn Chicken

Posted by on Feb 21, 2019 in #LastMinuteMeals, blog, good meals | Comments Off on Wholesome Popcorn Chicken

Hello, Mamas! I am popping on here to tell you about an awesome new recipe for every child’s favorite snack: chicken nuggets. Honestly, they are every adult’s favorite snack too. I think I am going to always have these ingredients handy because they are quick to make, easy for little hands to help with, and just plain delicious. The secret ingredient: potato chips! It doesn’t matter what flavor, I love barbecue, but I think the options are truly endless when it comes to being creative with this recipe. I do suggest, though, a sturdy chip. Two major things are happening this week: in Chicago we are seeing record setting low temperatures and the Superbowl is on Sunday. What do these two occasions have in common? You could always add beans! The thing that takes the longest is the prep. The chopping, dicing, blanching, more chopping, slicing…but...

Alright Mamas, I’m not gonna lie…I was a little ambitious this week. I have a friend, Courtney, who I call the “Zucchini Queen”. She can make any dish out of a zucchini and it always turns out beautiful and taste delicious. I don’t know how she does it, but I wanted to try it myself. My test recipe: Zucchini Lasagna. In an attempt to keep it real, I am just going to admit: I had low hopes. Right from the beginning I cut my finger and it started bleeding, making me regret not ordering pizza. But I pushed through, and two Band-Aids later, I was back at it. Second red flag: I burnt an entire tray of zucchini slices to a crisp. Still I did not order pizza. And you...

One of our favorite summer entertaining tricks is a Build Your Own ____ Bar. It can be build your own brat, burger, veggie burger, salmon sandwich, hot dog, chicken sandwich…you get the idea. Ask your guests to bring a side dish or fruit for dessert and your work is considerably less! This 4th of July we’re offering brats we got from our local pastured meat supplier (All Grass Farms for any of you locals!)  These toppings pair perfectly but honestly we’ve used this exact spread with beef burgers and salmon sandwiches too.  While it may seem like a lot condiments to ‘make’, keep in mind that they all are only a few ingredients, and...
