In my opinion, the best part about the cold weather is…soup! I could eat soup for breakfast, lunch, and dinner (and actually, I have been known to do just that). I love how easy it is to make once and eat for days. It’s perfect to bring to the office or school in a thermos…I could go on and on about how much I love soup. So today I am sharing this delicious recipe for vegan butternut squash soup. Spooky Halloween Dinner: Jack-O-Lantern Stuffed Peppers

Posted by on Oct 30, 2019 in blog | Comments Off on Spooky Halloween Dinner: Jack-O-Lantern Stuffed Peppers

Halloween has been one of my favorite holidays since I was a kid. Aside from the green light to indulge in some extra chocolate, I have always loved how people go all out while celebrating, and I am no different. While I may not have spider webs strung out in my front yard, I do love a good Halloween themed meal! This year, I took an easier route than cutting jack-o-lantern faces into sweet potato rounds like I did last year… These stuffed peppers are easy to make and a big hit for a fun themed dinner! Make the stuffing ahead and soften the peppers, then simple warm, stuff, and eat when you get back from trick-or-treating. We will need a little extra...

Paleo Zpaghetti and Meatballs

The best kind of comfort food is the kind that makes you feel warm and cozy while also being healthy and nutritious! We borrowed a recipe from our friend’s blog: Jessica is great at picking out traditionally classic recipes and giving them a healthy twist that is still delicious! And what is Zpaghetti you ask? Why Zoodles Spaghetti of course 🙂 So we put a little twist on her Veggie Meatballs in Marinara and added Mama Jess Organic Pasta Sauce (because our sauce is certified Paleo as well!). The trick with these veggie meatballs is if you overcook them, you can easily break up the meatballs and add them into the Mama Jess sauce to form...

Roasted Carrot Fries with Mama Jess Fry Sauce

Posted by on Oct 17, 2019 in blog | Comments Off on Roasted Carrot Fries with Mama Jess Fry Sauce

We saw such a great response from our Roasted Butternut Squash Fries that we started thinking outside of the box with what else we can make “french fries” out of. The goal was to make them just as delicious and a great way to get in another helping of veggies. One thing I really loved (past tense cause they were eaten quickly) about these carrot fries is how easy and quick it was to prep and roast them! So after a quick wash, peel, and chop I tossed them in olive oil, sprinkled salt, and roasted at 425 degrees F for 20-22 minutes (or until they are the crispy brown color that you are looking for), tossing halfway…and poof! that was the entire...

Spaghetti Squash Bowls

Posted by on Oct 11, 2019 in blog, blogs | Comments Off on Spaghetti Squash Bowls

I found this gem of a recipe on Instagram, and it has been adapted from Cookie and Kate’s recipe that she posted earlier this month! These spaghetti squash bowls are a great way to incorporate a bunch of veggies into your day and enjoy a new spin on a classic “pasta” recipe. Before you start, if you aren’t familiar with cooking spaghetti squash, I recommend THIS video on how to properly prepare it. In fact, the longest part of the recipe is prepping and initially baking the spaghetti squash. So pop it in the oven, get some work done, and come back to finish the rest of the simple (and quick!) parts of the recipe before you enjoy it. The really...
