Smoky Chorizo, Kale, and Potato Soup (Dairy Free)

Posted by on Dec 23, 2020 in blog | Comments Off on Smoky Chorizo, Kale, and Potato Soup (Dairy Free)

It’s been a busy few weeks as we approach Christmas, so let’s take it down a notch and make this deliciously tangy and hearty winter soup! I tried this recipe for the first time this week and it made me feel so cozy inside. We are expecting a cold front in Chicago, just in time for Christmas, so this soup will warm you right up! With the smoky chorizo, tangy lemon, creamy coconut milk, and soft potatoes, it is just what we need this holiday season! This recipe was originally created by Tieghan Gerard of Half Baked Harvest, and you can find the original recipe HERE (we adapted it slightly to make it dairy free). Enjoy this delicious recipe and check out...

Turmeric and Coconut Braised Cabbage and Chickpeas (Vegan)

Posted by on Dec 3, 2020 in blog | Comments Off on Turmeric and Coconut Braised Cabbage and Chickpeas (Vegan)

From the moment I saw this recipe posted on Instagram, I knew that I had to try it. Something about tender cabbage tucked into a chickpea and coconut milk bath just seems so comforting. Also, Hetty McKinnon’s photo on the Bon Appetite website helped! In fact, I was craving this so much that I made it the morning after I saw it at 9:45am. I ate it by 10:30am. And it lived up to everything I had hoped for. What this recipe brings to the table: Cabbage: One of my favorite cruciferous veggies. Cabbage is even more super because it has a type of nutrient called indoles. Indoles actually protect against breast and prostate cancers. Ginger: Great for its digestive...

Paleo Sweet Potato Casserole

Posted by on Nov 25, 2020 in blog | Comments Off on Paleo Sweet Potato Casserole

While it’s a smaller Thanksgiving this year, we are still filling our table with wholesome, hearty foods. What I love about this recipe: it’s only a few (wholesome!) ingredients and it whips up in about 30 minutes, perfect for a day of recipe.  Because sweet potatoes are so naturally sweet, all you need is about a tablespoon or two of maple syrup in the crumble on top and a touch of salt to really bring out that flavor. I used some bacon bits for that salt, but I also added in a dash to the mashed sweet potatoes! Ok! This is a quick post because it’s such a quick and easy recipe! Between the creamy sweet potatoes and the crunchy bacon, pecan,...

Pumpkin Sweet Potato Soup (Vegan / Gluten Free)

In my opinion, the best part about fall is that squash season and soup season collide. After last year’s success with Vegan Butternut Squash Soup, we are back at it again with Pumpkin Sweet Potato Soup! This recipe is vegan, gluten free, sugar free, oil free…and so darn delicious. Here’s what else we have packed in there for you: Sweet taters: these guys are practically one of the most perfect veggies. High in Fiber an Vitamin A, and they have a much lower glycemic index than white taters! Pumpkin: another Vitamin A superstar! Also high in Vitamin C, Potassium, and Phosphorus. Coconut milk: Great source of MCTs, which did you know can help you...

Sage Pork Stuffed Acorn Squash (Whole30 / Paleo)

Posted by on Nov 11, 2020 in blog | Comments Off on Sage Pork Stuffed Acorn Squash (Whole30 / Paleo)

Love at first bite…that’s how we feel about this week’s recipe bursting with fall flavor! Who can resist a roasted squash recipe this time of the year? Better yet, who can resist a roasted squash recipe that whips up in 30 minutes?! That’s right! While the acorn squash roasts, simply cook your filling and you are set for dinner the minute those squashes come out of the oven. (Ok, how many times can I say “squash” in a sentence?) What we love even more about this recipe is it is packed with a variety of vegetables (squash! onions! cauliflower rice!), tender ground pork, and sweet and savory flavors. Plus the mix of seasonings is...

Barbecue Chicken Protein Bowls (Whole 30 / Paleo)

Posted by on Nov 5, 2020 in blog | Comments Off on Barbecue Chicken Protein Bowls (Whole 30 / Paleo)

I love the idea of bringing a bunch of ingredients together that result in a medley of flavors in each bite. Doesn’t that sound delightful? Well, then you will love today’s recipe: Barbecue Chicken Protein Bowls. For those days you are craving Chiptole, but better…and homemade!  I went the simple route and shredded an organic rotisserie chicken rather than baking chicken breasts and shredding them. This saves so much time and adds so much flavor! This is also a great recipe if you have extra chicken leftover from dinner. I also purchased a coleslaw bag, but I made my own Whole 30 approved mayo-based sauce. More in the ingredients, below! This...
