Butternut Squash Fries with Fry Sauce

I have a confession: I am obsessed with French fries. Waffle fries, steak fries, frites, curly fries…I don’t have a type. Lately, though, I have been exploring recipes for a cleaner, healthier version of the French fry. First, I settled with a sweet potato fry (using this recipe, just with sweet potatoes!), but I wanted to go even healthier.

Enter the Butternut Squash Fry. A simple recipe both in the instructions and in the ingredients, and I love squeezing in another veggie serving for the day while still feeling like I’m indulging. The only thing missing was a fantastic sauce to dip these in.

(Pro tip: when de-seeding the squash, keep the seeds to roast! Such a satisfying snack.)

Enter the Fry Sauce. This is a popular item offered on fast food menus in some areas of the country and it is traditionally made with ketchup and mayonnaise. But I said to heck with tradition and made it my own with a bit of a kick.

Butternut Squash Fries and Fry Sauce

For the fries
  1. 2 butternut squash
  2. 2 tbsp olive oil
  3. Salt to taste
For the fry sauce
  1. 1 cup mayonnaise
  2. 1/4 cup Mama Jess Organic Garden Ketchup
  3. 2 tbsp spicy mustard
  4. 1 tsp worcestshire sauce
  5. ½ tsp onion powder
  6. 1 tsp garlic powder
  7. 1 tsp paprika
  8. 1 tsp chili powder
  9. 1 tsp cayenne pepper
For the fries
  1. Pre-heat the oven to 425 degrees F
  2. Carefully cut the skin off of the squash
  3. Cut the squash in half lengthwise and scoop out the seeds (save these to roast!)
  4. Cut each half in half again widthwise. Then cut into matchsticks, each less than a ¼ inch thick.
  5. Soak the fries in a bowl of cold water for at least 30 minutes, drying thoroughly before baking.
  6. Arrange the fries on a large baking sheet so they are separated. Very lightly coat with olive oil, the sprinkle salt.
  7. Bake for about 1 hour, turning the fries every 15-20 minutes to prevent burning.
For the fry sauce
  1. In a small dipping bowl, mix all of the ingredients together with a spoon
  2. Store in the refrigerator until served with the fries
