This one is for all of you buffalo wing lovers who don’t love looking at the buffalo wing nutrition labels. Save the guilt, keep the taste is my motto which is why I LOVE these buffalo cauliflower nuggets! Cauliflower is just the craziest vegetable because it can transform into anything: mashed potatoes, mac and cheese, rice, and now chicken nuggets?! Yes. It really is magic.

Put these out with some ranch dipping sauce for an after school snack, or a guilt-free game day dish. And if you don’t love buffalo sauce (like I do), try them with barbecue, honey mustard…the options are endless!

Buffalo Cauliflower Nuggets

- 1 head of cauliflower, broken into florets
- 1/2 cup almond milk
- 2 tbsp coconut flour
- 1/2 cup almond flour
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1 tbsp ground cumin
- Pinch of salt
- 1 cup buffalo sauce
- Preheat the oven to 350 degrees F
- In a large bowl, mix together all of the ingredients except for the cauliflower and the buffalo sauce. Whisk together well.
- When the ingredients are combined, add in the cauliflower and turn in the batter until the florets are evenly covered in the batter.
- Bake in a single layer on a baking sheet for 20-25 minutes, or until the cauliflower is just starting to turn golden.
- Remove from oven, let cool for a minute, replace cauliflower another large (clean) bowl, and combine with buffalo sauce. Toss until the cauliflower is evenly coated.
- Return to baking pan and bake for another 10-12 minutes. If you would like your cauliflower crispier, broil for a few minutes--make sure to watch it closely!
- Enjoy with ranch or blue cheese dipping sauce!
