Happy Almost Thanksgiving, Mamas!

Today’s recipe: Brie and Fig Poppers!
Just look at that pure puff pastry perfection…You should be warned though: it’s almost like a magic trick, how quickly these will disappear, so maybe have a batch or two ready to go because they will be a favorite! I just love the earthy flavor of the brie mixed with the sweetness of the fig jam, held together by a buttery puff pastry! The best part? They only take about 20 minutes from start to finish!
I should also note, in the spirit of Thanksgiving, you can replace the fig jam with cranberry sauce! I am using fig jam because it is one of my favorite spreads and I had it in my house already!
Now lets get to the recipe:
First set your oven to 400 degrees F and lightly grease a mini cupcake tin, setting it aside for now. Then roll out the croissant dough, pressing together the pieces that are perforated apart so it is one long sheet.
Here, I would suggest rolling your dough out a bit with a rolling pin. One, to use more of it for later batches, and two, because the puff pastry rises rapidly and if it’s too thick, the cheese and fig jam will spill out…all over the bottom of your oven. I learned this the hard way, so do as I say, not as I do…
Then, using a knife, carefully cut the dough into small squares for as many mini cupcake cups you have in your pan. Place each square in a cup and lightly press down.
Next, cut the brie cheese into small cubes and nest them into the puff pastry squares. Last step, (yes we are on the last step already!), spoon about 1 tsp of fig jam into each of the cups. Now pop those poppers into the oven for about 10-12 minutes, or until the puff pastry is golden.
And that’s it! Seriously! You have just made a delicious appetizer in less than 20 minutes from prepping to serving!
