Roasted Carrot Fries with Mama Jess Fry Sauce

Posted by on Oct 17, 2019 in blog | Comments Off on Roasted Carrot Fries with Mama Jess Fry Sauce

We saw such a great response from our Roasted Butternut Squash Fries that we started thinking outside of the box with what else we can make “french fries” out of. The goal was to make them just as delicious and a great way to get in another helping of veggies. One thing I really loved (past tense cause they were eaten quickly) about these carrot fries is how easy and quick it was to prep and roast them! So after a quick wash, peel, and chop I tossed them in olive oil, sprinkled salt, and roasted at 425 degrees F for 20-22 minutes (or until they are the crispy brown color that you are looking for), tossing halfway…and poof! that was the entire...

Spaghetti Squash Bowls

Posted by on Oct 11, 2019 in blog, blogs | Comments Off on Spaghetti Squash Bowls

I found this gem of a recipe on Instagram, and it has been adapted from Cookie and Kate’s recipe that she posted earlier this month! These spaghetti squash bowls are a great way to incorporate a bunch of veggies into your day and enjoy a new spin on a classic “pasta” recipe. Before you start, if you aren’t familiar with cooking spaghetti squash, I recommend THIS video on how to properly prepare it. Rueben Pinwheels with Homemade Thousand Island Dressing

Posted by on Oct 3, 2019 in blog, Uncategorized | Comments Off on Rueben Pinwheels with Homemade Thousand Island Dressing

This week, I was browsing my saved Pinterest recipes, trying to find something fun to bring to a friend’s house for Book Club. I didn’t have a lot of time…or a lot of patience…and then I came across these Rueben Pinwheels from Belly Full (I adapted from the original recipe). No oven time, minimal mess, and fun enough to elevate my food contribution to the group from “boring but good” to “fun and delish”. These are also perfect for a sandwich alternative in lunch boxes! Now you’re an even cooler mom! The best part? I used my trusty Mama Jess Organic Ketchup to make some homemade Thousand Island dressing to add to the pinwheels! No sugar added,...

Fall Potato Salad

Posted by on Sep 26, 2019 in blog | Comments Off on Fall Potato Salad

I love the foods of summer but the season of Fall is my favorite. So today, I decided to combine the two to create a Summer Food in Fall! This Fall Potato salad is chock-full of roasted veggies (my favorite) and not too mayo-y, therefore keeping the nutritious aspect that is often lost in summer potato salads.  What I really love about this dish is that it can be served as a side during dinner or at a party, or you can be creative and top it with a fried egg for breakfast the next day! Plus, a warm salad is always a delightful surprise when it’s chilly outside.  Enjoy this dish, I know my family and I did! Xoxo, Claire and the Mamas at Mama Jess ...

This one is for all of you buffalo wing lovers who don’t love looking at the buffalo wing nutrition labels. Save the guilt, keep the taste is my motto which is why I LOVE these buffalo cauliflower nuggets!
