Wholesome Popcorn Chicken

Hello, Mamas! I am popping on here to tell you about an awesome new recipe for every child’s favorite snack: chicken nuggets. Honestly, they are every adult’s favorite snack too. I think I am going to always have these ingredients handy because they are quick to make, easy for little hands to help with, and just plain delicious. The secret ingredient: potato chips! It doesn’t matter what flavor, I love barbecue, but I think the options are truly endless when it comes to being creative with this recipe. I do suggest, though, a sturdy chip. I prefer the Kettle Brand because their chips don’t grind to dust when I put them in the food processor with the...

30 Minute Shrimp Diavolo Pasta

Posted by on Feb 13, 2019 in #LastMinuteMeals, blog, blogs, recipes | Comments Off on 30 Minute Shrimp Diavolo Pasta

Happy (almost) Valentine’s Day, mamas! My goal this week was to bring you all a recipe that is easy to make in a short amount of time, while still being romantic to share with your Valentine! One of my favorite, hands off, recipes is a One Pot Pasta that I copied from a Martha Stewart magazine years ago and have since tweaked for my taste. Today I am turning it into a Shrimp Diavolo dish and it will not disappoint! And when you have enjoyed the heat in this dish, cool down with something sweet like the cherry coconut macaroons we featured last week! Here’s how to make it: First, cook your shrimp (unless you bought pre-cooked!). All you have to do is lightly sauté...

Cherry Coconut Macaroons

Because it’s a wet, dreary Wednesday here in Chicago, I am sharing my new favorite cookie recipe…and just in time for Valentine’s Day! These cherry coconut macaroons are the perfect amount of sweet and take the perfect amount of time (about 25 minutes from start to finish!). Make them with your little Valentines at home on a slow Sunday or after school for the perfect snack. I actually made them yesterday to test out, and ended making them again today because they seemed to have mysteriously disappeared over night…. Regarding the ingredients, I went with organic when I could, which is why the cherry color in the macaroons turned out a bit more...

Hearty Low Carb Chili

Posted by on Jan 30, 2019 in blog, blogs, good meals, Uncategorized | Comments Off on Hearty Low Carb Chili

Two major things are happening this week: in Chicago we are seeing record setting low temperatures and the Superbowl is on Sunday. What do these two occasions have in common? Both call for a hearty bowl of chili! Now, here at Mama Jess, we understand that chili is a highly contested meal. To bean or not to bean, that is one of the questions. Today we chose not to bean, and went for a super low carb chili dish! This is perfect for all of our keto friends out there, or anyone who is just looking for a great chili recipe. The best part? You could always add beans! The thing that takes the longest is the prep. The chopping, dicing, blanching, more chopping, slicing…but...

The Perfect Crispy Baked Steak Fries

Posted by on Jan 22, 2019 in blog, blogs, recipes | Comments Off on The Perfect Crispy Baked Steak Fries

Everyone has a vice. For some people it’s a glass of wine with dinner, for others it’s a bit of chocolate after lunch. For me? French fries. Anytime of the day. Anywhere in the world. I don’t have a type either. Waffle fries, shoestring, crunchy, soft, salty, parmesan, drizzled with truffle oil…it doesn’t matter. In honor of my vice, I have created a salty blend of spices with a kick to top the perfect crispy, thick cut steak fries! The beauty of this recipe is in a tip I found online (bless you, Pinterest): after slicing the potato wedges, microwave them for 5 minutes, uncovered. This will not only get some of the water out, but also give you that soft inside...
