Greek Veggie Pita and Tzatziki Sauce

Yasas everyone, Claire here. If we haven’t “met” yet, I help Mama Jess out with recipes and food photography (you can catch me on Instagram @mamajessfounder). I am feeling nostalgic today because on May 28, 2015 (five whole years ago!) I boarded a plane to spend the summer in Greece working in Thessaloniki. I knew no one, didn’t speak a word of Greek, and was going for the first time. I connected with new friends over mezzes, or small plates, of some of the best food I have ever had in my life. So today, I decided to make a greek-inspired recipe: roasted veggies in a pita with tzatziki sauce! I added feta because no Greek recipe is...

Butternut Squash Carbonara

Posted by on May 21, 2020 in blog | Comments Off on Butternut Squash Carbonara

Ready for another light and healthy recipe completely packed with flavor…and ready in under 30 minutes? Then you should try this Butternut Squash Carbonara. I love experimenting with different types of veggie noodles, and these butternut squash noodles have a great texture and just a bit of sweetness that adds such great flavor to each bite.  Carbonara is a classic Italian recipe that calls for an egg to be tossed in hot pasta with a bit of the reserved pasta water to create a creamy sauce…without any cream! Zucchini Fritters

Oh. My. Goodness. These Zucchini Fritters are out of this world. I don’t even know how else to start this blog post other than declaring that these will be your favorite snack all summer. Easy to make, delicious to eat, and you can add different ingredients to make them new every time (looking at you, Parmesan cheese). A lot of recipes call for you to grate the zucchini, but I actually spiralized 4 zucchini, then chopped that up. I found it to be less labor-intensive and it was easier to dry out the zucchini (you don’t want it soggy, otherwise the fritters don’t crisp up!). Eat them for breakfast with a poached egg on top like a benedict or simply as...

Spaghetti Squash Bolognese Bake

Posted by on May 7, 2020 in blog | Comments Off on Spaghetti Squash Bolognese Bake

As warmer weather keeps teasing us, it seems that summer is on its way to stay soon…and with that comes summer squash and light and airy recipes! Pasta bakes in my family are a favorite (see the baked ziti and this cauliflower gnocchi bake) so we lightened a traditional spaghetti bake up with spaghetti squash! The other best part? We used an entire jar of Mama Jess Garden organic pasta sauce to up our veggie intake even more! This dish packs all of the flavor without the gluten and it great to prepare ahead and bake just before you are ready to eat. I used organic frozen spaghetti squash from Costco, which really saved me time in preparing the squash. If you would...
