Veggie burgers don’t have to be eaten as a traditional burger; these @Hilaryseatwell veggie burgers make an amazing substitute for toast! You can even heat them up in a toaster, making them ideal for quick breakfasts, lunches or snacks. These have a lovely nutty flavor and pleasant crunch thanks to the millet and quinoa. And check out the full ingredient list; whole grain millet, whole grain quinoa, coconut oil, sweet potatoes, leafy greens, onions, Redmond’s Real Salt, apple cider vinegar, psyllium husk powder, arrowroot and garlic. Did I mention it’s all organic!? It’s a real food meets convenience food miracle.  We topped it with...

Instant Pot Pork Ragu

This recipe is our first official foray into the world of instant pot cooking. We may be a little behind the times in this area, but it’s for good reason.  We had to decide for ourselves; is the instant pot worth all the hype? There a million arguments for and against this re-invented but still old school pressure cooking device, but as busy parents our criteria was pretty specific.  Would it save us time when cooking dinner? It’s finally warming up in our neck of the woods and these spring days are bringing with them more chances to grill! If you’re not a meat eater or just need a break from the standard beef variety these @engine2diet burgers make an awesome alternative. We love the simple clean ingredient list; these burgers are made with only black beans, brown rice, tomatoes, rolled oats, poblano pepper, pumpkin seeds, cilantro, sea salt, cumin, coriander and black pepper.  Amazing! And with a list that simple we can happily serve them to our kiddos. Our toddlers prefer them chopped into small pieces so they can dunk in ketchup. Our school age kids prefer their own...

Eggs in Purgatory with Mama Jess Garden Sauce

Posted by on Apr 20, 2018 in #LastMinuteMeals, blog, blogs, recipes | Comments Off on Eggs in Purgatory with Mama Jess Garden Sauce

Any dish that comes with sauce, egg yolk and a bit of kick is my kind of meal. This recipe is perfect for a quick weeknight dinner (meatless Monday anyone?) or a lovely one-pan weekend brunch. It’s a perfect #LastMinuteMeal because it cooks so quickly and uses minimal (and flexible) ingredients. You can punch up the spice with extra red pepper or leave it out entirely the way our kids prefer. And while we added cherry tomatoes and greens for added nutrition, you could also use grated zucchini or carrots if the smallest members of your family demand that the vegetables be hidden.  Start by sautéing shallots, garlic, red pepper (if using) and anchovy paste in...
