Vegan Lasagna aka No Cheese Lasagna with Mama Jess Garden Good 5 Veggie Organic Pasta sauce     I am a forever student of food science & nutrition and part of my continuing studies is still researching and playing with recipes like I did back in food labs & test kitchens. You will often find me reading cookbooks poolside during vacation…I guess that’s why this is my passion. One day, I promise to compile all my redesigned recipes into a cookbook, but for now I get to share them with you bit by bit on the Mama Jess blog.   Lately I have been craving lasagna (already!) even though it’s still August. So I went looking through my...

Mama Jess Back to School Tip #6 – Last one – Healthy after school snacks   Today marks our last day of Back to School Tips. We hope you’ve had a chance to prepare and then enjoy every last bit of summer. Our last tip is to not forget the after school snacks in this weeks grocery shopping. After school snacks are a vital way to re-charge for after school activities and homework. I like to think of these as mini-meals. Mama Jess Back to School Tip #4 – Safe and Eco-friendly Containers for Lunch

Posted by on Aug 15, 2013 in blog | Comments Off on Mama Jess Back to School Tip #4 – Safe and Eco-friendly Containers for Lunch

It’s what is on the inside that counts…but it sure helps to keep our food storage containers eco-friendly!   There are several options for lunch containers. Most involve a fabric outer lunch ‘box’ with inner plastic or stainless containers for your food. Stainless is the best option, but harder to find. My favorites are PlanetBox (bento type) and Lunchbots individual stainless containers with Clicks plastic lids (abesmarket.com). These both last forever which is good because they are an investment. Pottery Barn Kids sells some fun PlanetBox designs exclusive to PB, you can also purchase them through their website: planetbox.com   I do use some plastics...

mama jess back to school tip #3 – batch cooking – healthy zucchini muffins

Posted by on Aug 14, 2013 in blog | Comments Off on mama jess back to school tip #3 – batch cooking – healthy zucchini muffins

Hello friends – Our Back to School Tip today is BATCH COOKING. I cannot say enough about batch cooking and how easy it can be and incredibly helpful it truly is to a busy families schedule. Batch cooking is simply taking a recipe (I prefer recipes that can be frozen) and scaling it up by doubling it or tripling it. This works fabulous for items like:   Soups Muffins Cupcakes Pancakes Waffles Cookies Quinoa Clusters Lasagna Salad Ingredients (grilled veggies, grilled chicken, quinoa, beans, dressings) Meatballs Oatmeal Grains (barley, quinoa, brown rice) Soft Pretzels Burritos/Wraps   Just think – this Sunday morning make homemade, whole-wheat waffles and...
